LEMON AND POPPY SEED MUFFINS

Hello friends, this recipe came to me when i was looking for ideas on what to bake on a beautiful
sunny day. I liked the sound of this recipe, ideal for a warm day with a glass of iced coffee.
Now let’s get baking.

LEMON AND POPPY SEED MUFFINS

Ingredients:                                          makes 12

300g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda
170g caster sugar
Zest of 2 lemons
2 tbsp of poppy seeds
250ml full fat milk
2 large eggs
2 tsp vanilla essence
115g melted butter

Lemon glaze:

Juice of 1 lemon
4 tbsp of icing sugar

Method:

Pre-heat the oven to 200c /180c fan (gas mark 6)
Line a 12 hole muffin tin with muffin cases.
In a large bowl mix together the flour, baking powder and bicarbonate of soda.
In a separate bowl mix together the sugar and lemon zest and add to the flour mixture along with
the poppy seeds.
In a measuring jug add the milk, wisk in the eggs, vanilla essence and butter.
Make a well in the centre of the dry ingredients and pour in the wet ingredients, combine
everything to make a batter  (Don’t over mix!!).
Spoon the mixture evenly between the muffin cases.
Bake in the oven for 15 to 18 minutes until golden brown and well risen.
Take out of the oven and cool for 5 minutes then remove from tin and allow to cool completely on wire rack.

For the lemon glaze , put the icing sugar in a small bowl and add 1 tsp of lemon juice.
Mix well , add more if necessary until you get a runny consistency.
Cover the top of the cooled muffins. Sprinkle some poppy seeds and a slice of lemon to decorate.
